Black Bean Brownies Recipe
These brownies are made without flour and use dried beans. They are best made the day before as the flavor and texture improves overnight. This recipe makes eight brownies.
1 1/2 cups of black beans (made from 3/4 cup of dried beans - cooking instructions below)
1 tsp baking soda
1/4 cup of walnuts, finely chopped
1/4 cup and 2 tbsp of cocoa powder
2 tbsp of coconut oil
1/2 tsp of cinnamon powder
1 tsp of vanilla essence
a pinch of salt
Cook the black beans
Cover the beans with ample water, add a tsp of baking soda, stir briefly and leave them to soak for eight hours. Drain them and add fresh water to cover. Bring them to the boil, then simmer for 15-25 minutes or until soft. Drain the beans.(Save the cooking water - it makes a nutritious stock for another meal or soup).
Make the brownies
Preheat the oven to 180 C / 350 F
Mix all the ingredients together. Mash them to a smooth texture with a food processor or a stick blender. Or mash the beans with a fork first and then combine with the other ingredients.
Pour the mixture into a small baking dish lined with baking parchment. Spread it out evenly and flatten the surface with a spoon.
Bake for 30 minutes, remove from the oven and cut into eight pieces. Then place the pieces onto a baking sheet and bake for another ten minutes.
Allow to cool and put in the fridge overnight. This brings out the best flavor.
Before serving, bring to room temperature (three to four minutes).
