Quick Spring Salad with Sprouted Chickpeas and Lemon Dressing

Here's a crisp, crunchy salad we thought you'd enjoy!

Spring Salad Recipe

(makes about two cups of salad)


1 cup of sprouted chickpeas

1 cup of your favorite microgreens or green leafy sprouts

1/4 cup sliced scallions

1 small carrot, grated

Salad Dressing

1 Tbsp olive oil

1 Tsp Dijon mustard

1 Tsp zest from an organic lemon

1 Tsp fresh lemon juice

1 Tsp honey


Whisk the dressing ingredients together.

Put the salad in a bowl, pour over the dressing, toss to coat.

Serve immediately and enjoy!
