This is a quick and easy recipe that can be made with home-cooked or canned adzuki beans.
It's is a healty snack packed with protein, fiber and nutrients.
1 cup cooked adzuki beans
¼ cup tahini
¼ cup olive oil
Juice & zest from one lemon
1 TBSP water
3 cloves garlic
½ TSP black pepper
A couple of fresh mint leaves, finely chopped
1 TSP sunflower seeds
Salt to taste (optional)
Put all ingredients in a food processor and blend, or mash all ingredients by hand with a potato masher. Gradually mix in olive oil, then blend so it is incorporated.
Serve with sunflower seeds sprinkled on top. Enjoy it with toasted pita bread, olives, and salad.
