Celebrate 'Spicy Guacamole Day' (yes it's a thing!) with this delicious, healthy recipe.

Spicy Guacamole with Homemade Pita Chips

Serves 2

Guacamole ingredients

2 avocados, pitted and mashed

1 tomato, with seeds removed, finely chopped

1 scallion sliced thin

Juice from ½ a lime

1 Tsp full fat plain yogurt

½ Tsp red pepper flakes

½ Tsp cumin

1 clove of garlic, minced

2 Tbsp spicy salsa

½ cup of fresh radish sprouts

Pita Chips

2 whole wheat pitas

2 Tbsp olive oil

Ground black pepper

Directions

Heat oven to 350 degrees or Gas mark 4

Cut the pita bread into chip sized pieces. Brush with olive oil and sprinkle with black pepper. Bake until crisp (about 5 minutes.) Cool and serve with the guacamole.

Mix all the guacamole ingredients except the sprouts in a bowl and let stand for 20 minutes. Sprinkle with the radish sprouts.
