Today is the start of Healthy Weight Week. Instead of obsessing over the 'perfect weight' focus on eating an enjoyable healthy diet. This salad includes sunflower seeds which are highly satiating, meaning they increase feelings of fullness. Other highly satiating foods include beans, peas and lentils, whole grains, fruit and vegetables, nuts and seeds. 

Spinach, Avocado and Sunflower Seed Salad (serves five as a side dish)


5 cups fresh baby spinach leaves (washed)

2 avocados (cut into bite sized chunks)

1 tablespoon olive oil

Juice and zest of half a lemon

Half a cup of shelled sunflower seeds

A sprinkle of black pepper (to taste)


Put the the spinach in a salad bowl.

Make the salad dressing: Wisk the olive oil and lemon juice together until blended, then add the lemon zest

Pour the dressing on the spinach and toss the leaves, use just enough dressing to moisten the leaves. (Unused dressing can be stored in the fridge)

Add the sunflowers to the spinach, followed by the avocado

Sprinkle with black pepper and serve immediately
