Bota-Mochi (adzuki mochi)
1 1/2 pounds adzuki beans
2 c sugar
2 tsp salt
1 c Japanese rice
3 c japanese mochi rice
Cook beans in plenty of water until very soft. Be careful not to scorch. When the water is absorbed, add remaining ingredients. Stir for around 15 minutes. Be careful not to scorch mixture. Cool. Combine the rice and mochi rice and soak in water for 1 hour. Cook in rice cooker or in heavy saucepan, When rice has finished cooking, allow to cool, Make small rice balls about 2 inches in diameter. Place some of the bean mixture in the center and wrap around bean mixture. Place in paper cupcake cups.
