Sprouted Green Pea Salad





Ingredients:


½ cup Greek Yogurt

1 T Apple Cider Vinegar

2 T Olive Oil

½ t salt

¼ t black or red pepper

¼ red onion diced

2 celery stalks diced

½ cup smoke cheddar cheese or other smoked cheese such as smoked gouda

½ cup fresh tarragon and parsley mixed

¼ cup fresh mint

2 cups sprouted green pea – start with 1 cup dry and sprout for about 2 to 3 days

 

Directions:


  1. About 2 to 3 days before you want to serve this salad, sprout 1 cup of Certified Organic Green Pea - Sprout House

  2. When the peas are mature enough to harvest mix together yogurt, apple cider vinegar, olive oil, salt, pepper, and red pepper in a bowl.

  3. Add in diced onion, celery, cheese, tarragon and parsley, mint and peas.

  4. Mix thoroughly.

  5. Season to taste.

  6. Chill until ready to serve.
